<p>PREPARATION:<br />
Cut pork into large chunks. Peel potatoes and cut into 1-inch pieces. Seed, core, and thinly slice bell pepper.</p>
<p>Heat oil in a skillet; brown pork, stirring to brown all sides. Layer all ingredients in crockpot in order given; cover and cook on LOW until meat is tender, about 9 to 10 hours.</p>

* 2 pounds sauerkraut, rinsed and drained<br />

* 2 tablespoons cornstarch<br />

* 2 teaspoons caraway seeds, optional<br />
* 2 pounds beef top round steak or lean stew beef, trimmed of excess fat and cut 1/2-inch cubes</p>
<p>PREPARATION:<br />
Put cubed potatoes in the slow cooker. Top with the drained sauerkraut, then top with sliced onion. In a medium bowl, blend wine and cornstarch until smooth. Stir in the diced tomatoes with juice, garlic powder, pepper, salt, and caraway seeds. Pour about 2/3 of the tomato mixture over the potatoes and sauerkraut. Top with the beef cubes. Pour the remaining 1/3 of tomato mixture over all. Cover and cook on LOW for about 7 to 9 hours or until the beef and potatoes are tender.<br />
Serves 6 to 8</p>

<p>PREPARATION:<br />
Combine flour, paprika and garlic powder in a food storage bag; add stew beef and toss to coat. Brown coated beef in hot oil in a large skillet; transfer to the Crockpot. Add the remaining ingredients except for water and flour mixture. Cook on low for 8 to 10 hoursm, until vegetables are tender. About 30 minutes before serving, add flour mixture to the pot. Turn to high and cook until thickened.<br />
Serves 6 to 8.</p>

* 8 dried apricots, cut in half<br />

<p>PREPARATION:<br />
Trim any excess fat from beef; sprinkle with salt and pepper. Heat oil in 10-inch skillet over medium-high heat. Brown beef in the hot oil, stirring to brown all sides.</p>
<p>In a 4 to 5-quart crockpot, combine browned beef with sweet potatoes, garlic, allspice, bay leaf, cinnamon stick, onion, and tomatoes. Cover and cook on LOW for 8 hours, or until beef is tender. Stir in apricots.</p>
<p>Cover and cook on low about 20 minutes or until apricots are softened. Discard bay leaf and cinnamon stick. Sprinkle a little fresh parsley over the stew just before serving.<br />
Serves 6.</p>
